Being trained to use the Force does not make you a Jedi, its monastic order and also part military. Maz knows how to use the Force but she is not a Jedi, she has had encounters with Jedi Knights and Masters and is described as powerful in the Force.

In the Visual Dictionary, it states, "Since the disappearance of Luke Skywalker and the shattering of his fledging Jedi following, the cosmic Force has lain dormant, seemingly quieted to those able to sense its presence" and Kylo is described as "betraying other Jedi students studying with Master Luke Skywalker and responsible for their destruction" . So its surely implied there was quite a number Jedi students. Han Solo says in the film, "He was training a new generation of Jedi. One boy, an apprentice turned against him, destroyed it all. Luke felt responsible... He walked away from everything." The novel has it as, ""He was training a new generation of Jedi. There was no one else left to do it, so he took the burden on himself. Everything was going good, until one boy, an apprentice, turned against him and destroyed it all. Everything Luke had worked toward: gone. Luke felt responsible. He walked away from everything."

Lor San Tekka says, "without the Jedi there can be no balance in the Force, all will be given over to the Dark Side." So its no longer really about Anakin and the Sith prophecy stuff of the PT, but the Jedi and the Dark Side. The Visual Dictionary and TFA is all about really the Jedi returning(Luke and Rey) and not about Anakin which is different from Lucas's PT and what he turned the series into. The Empire tried to erase all traces of the Jedi and wipe out religion , but only succeeded in driving it underground(Church of the Force) the First Order attempts to continue out the Empire's work by destroying all traces of the Jedi religion and those who worship it.

According to a deleted scene, Maz is probably FS. And Leia certainly is, but neither of them are Jedi.

And I kind of like the idea that there are FS people out there that just have no real interest in becoming Jedi or Sith.

I think that there are probably other FS people out there besides the ones that we've met already. But as for full-on Jedi, well MAYBE a couple of Luke's students survived and went into hiding, but IDK?

I actually think that that's what Snoke truly fears about Luke. That if he returns, he could very well bring together these FS people and build a new Jedi Order relatively quickly. And this time, it might not be so easy for Snoke to destroy it all.

I've only seen the movie once but I don't think that happened did it? I only remember them not caring about the droid anymore because they didn't need him?

Very early in the film Kylo says he wants the droid unharmed. Hux says not to let his personal interests interfere with orders from Snoke. This suggests that destroying the droid (and the map) is an acceptable option from Snoke's point of view.

Yes, Snoke and Hux seem to be operate under the principle of "try to acquire the droid and find/kill Skywalker if at all possible. But if not, destroy it so that at least our enemies cannot find him themselves."

And later on this comes up again when Kylo captures Rey and, thinking that he can get the map out of her mind, tells his men to forget about BB-8. Which of course ends up blowing up in his and the FO's faces later on.

So we now know no Jedi from Luke's New Jedi Order survived from the new Episode VIII title. So the question becomes how long will it take to train Rey to become one. And then how to become one with Force? Before the First Order find them. Kylo Ren did see the island...
