I am wanting to make either an ewok or jawa costume but not sure how to/what to use to make one of them. Any one do this before or any ideas? I really like how these girls did theirs- as that way I can still eat/drink and not have to take a mask off

and then theres this for a jawa- of course I would have a mask, which is why id rather do the ewok

That's a very effective looking jawa mask!
As for the rest: find a pattern! Jawa costume is much easier to make. Find a hooded robe/cloak pattern (really easy this time of year) and a heavily textured brown fabric. A couple of belts for the shoulder straps/bandoliers, and all that's left is to build the anti-droid ion gun. Some army surplus ammo pouches might be good too.

For the ewok: if you want non-cartoony, find a fake fur that you like. The purpose of the hoods/hats was to hide seams. Go wild! If you want the cartoony look, find a teddy-bear costume pattern (winny the pooh?) and make it with different 'ewok' colored fabrics.

I think that the Krayt Clan forums have info on Jawas. And the Rebel Legion also has a section on creatures... I know several people are doing Jawas now. I think the Jawa might be cooler to wear --more ventilation. Just make sure you use a quality cloth with good texture to it. Surplus bandoliers are out there, and relatively inexpensive. Good luck!!!
