To be fair Plo Koon and Stass Allie didn't have a chance of turning around in their starfighter and speeder to shoot back in time.
Shaak Ti and Aayla Secura always stood out to me. I quite like Luminara and Barriss too, if only for their intriguing image.
Honourable mentions go to Kit 'Winning Smile' Fisto and Agen Kolar - though I'd have liked to have seen more from them both!

For some reason, I just enjoyed looking at Plo Koon. I never saw him fight or anything, I just think he's BA looking.

Ki-Adi Mundi's death scene was a bit for me too, and it seemed similar to the scene with Yoda sensing the Jedi deaths across the galaxy. Ki-Adi Mundi just looked so inconsolably sad at his beloved troopers betraying him.
He also gets the plus point of being one of the few Council members (besides Yoda) not to come across as an out-and-out *******. Definitely my favourite of the less prominent Jedi - although I also have a soft spot for Cin Drallig, who only gets the briefest of cameos, because I like the idea of making the films' real life fencing instructor into the Jedi Temple's fencing instructor. Plus he's the best boss fight in the Revenge of the Sith DS game.
Kit Fisto, Saesee Tiin and Plo Koon, loved their overall designs, but seeing as two of the three went out like bitches to a badly cgi'ed spinning and somersaulting elderly chap, I'll plump for Plo (who ended up much better used as a great character in the CW series)
I have to give my vote to Kit Fisto because of this moment...
.... but sad at the fact his death was pretty much over in a heartbeat...although saying that we can't have every Jedi we love going out in a big blaze of glory...and he WAS one of few Jedi who must have been strong enough to take along to arrest Palpatine, so that shows how respected he was. He also had some brilliant Clone War missions thanks to the EU books.
My honorable mention goes to Aayla Secura for her heartbreaking death...
... she was a tough Jedi and had some great moments, but the look on her face and her cold, brutal death is awful.
Although for the male viewers, she was a pretty "hot" Jedi, as they go.
Aayla Secura, for sure. Kit Fisto and Shaak Ti as close seconds.
What alaways bothered me about Kit Fisto was his big rubber hands.
My favorite non-main Jedi is probably Ki-Adi Mundi.

After Ki-Adi's attitude towards Ahsoka I look at his death scene a whole new light - sucks that he dies, but he did try to sentence innocent Ahsoka to death.
I didn't like how she never even got a chance to pull out her saber and defend herself. It was probably my most heartbreaking Jedi death to watch
And regarding the female Jedi, I have always liked Shaak Ti, Luminara Unduli, Barriss Offee, Aayla Secura and Bultar Swan.
