I always loved Kit Fisto... wish they did more with his character in the PT.... and especially with the whole 3 second he lasted against Palplatine..... ugh...
Fisto was such a unique character! In the PT he was unlike anything else we have seen, it just fascinated me. Wish they would've done more with his character. Put up a good fight against Palpatine for about 10 seconds.
Ki-Adi-Mundi. Had one of the best shot Order 66 scenes and I really felt for the dude, despite hardly getting to know him across the films.
In the PT I always found Kit Fisto interesting. Some of the early era Jedi were pretty cool - Nomi Sunrider etc.

I would say Shaak Ti, but I'm assuming this is based on the movies (I know she was there, but well... you know), so maybe Kit Fisto and Ki-Adi-Mundi. And maybe Aayla Secura. They should have introduced these a bit more in the movies.
Princess Leia was always my favorite when I was little (I was fourteen when The Phantom Menace came out, and saw the classic trilogy on VHS before that), but I was always a little disappointed that she's kinda the only girl in the galaxy. So when the prequels started coming out, I was thrilled that there were women Jedi. Respected women serving the Jedi Council in The Phantom Menace, awesome fighters on Geonosis in Attack of the Clones... So here's to them!
If you were to Force (har har har) my hand and make me choose my favourite Jedi from the Rise of the Empire era, I'd probably settle on Aayla Secura, The Dark Woman, or A'Sharad Hett. I don't really have much love for this particular era, though, so take that for what it is.
