Can Jedi/Sith fly (kind of like Neo in The Matrix)? I mean, they can levitate and jump great distances, so why don't they fly?

I'm sure they could; the question is why bother. Force use except for the most powerful Jedi is obviously tiring; you'd devote all your ability to flying and then arrive wherever you were planning to go unable to do much of anything else afterwards.

I think the closest we get to Jedi flying in the films is Luke and Anakin's various controlled falls (chasing Zam Wessel in AOTC for Anakin, and slowing his fall from the AT-AT in TESB for Luke), and Luke's extended leap from the skiff to Jabba's sail barge in ROTJ. I suppose you could count Qui-Gon and Obi-Wan's various super-extended jumps in TPM and ROTS as being pretty close, too.

Vader knocks Luke down the stairs in the carbon freezing chamber and then leaps down after him; that move has always looked to me like more of a launch than a jump.
