I don't want her to die. If she does, then at 200 years old in her sleep.
In her bed, thinking that the galaxy and herself are finally at peace. And if in the future there are more threats, there are others ready to take care of them.
That was weird.

I'd love Leia to be the centerpiece of a Hutt feast, http://en.wikipedia.org/wiki/Nyotaimori style, and she is crushed by the weight of the Hutt tongues as they dine off her.
Luke and Han would die first.
Leia's grandkids, or maybe great-grandkids, would vaguely remember her as "kind...but sad".

I don't even care what happens to anyone. because they have screwed up the post-NJO, so that I have lost interest in where that story goes, and the ST is either going to come after that storyline or alienate me for the last time by royally screwing over the post-RotJ EU.

Out of the Big Three, Leia makes the least sense to kill IMO.
If you kill Luke, you're left with Han and Leia - a couple.
If you kill Han, you're left with Luke and Leia - twins.
If you kill Leia, you're left with Luke and Han - really good friends, yes, but it's never been as strong as the other two relationships.
To be honest, after everything she's been put through, I don't think I want to see her die "onscreen." Let her fade into the sunset with Han.
That said, I do like Summer Dreamer's idea of her appearing as a Force ghost and Han can see her. That would be really moving if done right.
First choice is for her to die peacefully of old age. Second choice would be for her to go down fighting as a hero.
She's too iconic not to get a proper send off.
Her and Han die in a blaze of glory in the Falcon, sacrificing themselves.
