Well one thing is probably for certain. No matter how long they continue to make movies the Star Wars EU will likely go on forever and ever and ever. Of course that probably does mean there will be several reboots (or at least signficant time jumps where nothing being written about now will matter for the time period those authors are choosing to write (kind of like knights of the old republic is to the star wars movies)).

Just out of curiosity how many reboots has comic series like batman or spiderman seen (in which they have had an ongoing comic series since like the '50's or so)?

Batman has had at least 3 (Silver Age, Crisis on Infinite Earths, and New 52).

Technically, Spider-Man has never had a reboot.

One could say that the Ultimate Spiderman was one (while the original continued), although he's set to join the regular Marvel Universe anyways.

Batman has so many different incarnations over various media - one can't really discount, for instance, the Batman of the Diniverse, or the Batman of the Arkham games. Heck, Planetary and Batman '66 show that you can't even discount the old 60s TV series...

Those are the three big ones. Though there are numerous minor reboots that happen fairly often, such as Zero Hour. And there are even smaller ones still, where an origin story will be retold and change just one or two things. You see this more often in DC than you do with Marvel however.
