What would their job be like. What kind of complaints would they have. The enterprise with Captain kirk on board. What kind of stories could they tell.

Every woman on the TOS Enterprise: "If this is the future, then why are we wearing mini-skirts and knee-high go-go boots?".

Kirk would have 235 sexual harassment claims filed against him

I really hope that number was a deliberate choice.

They would have to keep rerunning job vacancies for redshirt away team members.

Any new guy would suffer from a fear of dying a horrible death and human resource manager would have to send him to bones for drugs to calm him down. After getting the drugs I am sure the good doctor informs the captain that the new crewman is ready for duty even though he is half out of it. Of course he will be promptly sent on an away mission soon after.

Human Resource manager's log stardate 3256.9, The captain has another sexual harrassment claim against him. This time its the new yeoman with the green skin. I don't know what he does or takes but the man is a walking litigation nightmare. I spend roughly fifteen percent on sexual harrassment claims on him alone. Training doesn't work. Besides he doesn't take it anyways and the one time he did he came onto the female instructor. She promptly threw him out. And according to my other human resource managers it seems to be a normal thing for captains of a star ship. They just stop taking the claims and told the women to close their eyes and think of a black hole. Its either sexual harrassment on this ship or redshirts dying by the dozen. It seems we lose so many of them I am constantly interviewing new candidates. The guys in engineering like to take bets on the new recruits and how long they will survive.

Seeing that the StarSHIP Enterprise is part of a paramilitary naval force - not a private profit or nonprofit organization - there are no HR managers, but rather officers within a chain of command. I figure the closest thing to a HR manager would be the XO or First Officer. In TOS Enterprise, that'd be Spock (and what a delightful HR manager a cold, emotionless Vulcan would turn out to be). Picard and Riker had it easier with Troi being the buffer between them and any particular crewman's bitching and moaning.:p

Edit: And Troi probably had an easier time about it what with there being a bar on the ship tended by a sympathetic bartender that excelled at listening.

I'm assuming the HR manager would hate their life and become the villain.

I would think that a "human" resource manager would be rather insulting to some within the Federation.

There are no complaints to HR in Roddenberry's vision of the future. The galaxy is just too perfect.

Kirk's advances were always welcome. That's what made him cool.

All sexual molestors tell themselves that.

Now I can't help but think that the TOS is just Kirk's memories, and if you were to play what really happened, Kirk would be a drunk lech who almost got his ship destroyed constantly.
