If you mean the titular cartoons, none of them, as I don't watch them.

If you mean the actual war, I'm quite fond of the Coruscant Fire Service one that hosed down General Grevious' flagship as it crashed onto Coruscant.

I like emergency services in general, but he also amuses me because I imagine him not being able to shoot any jedi when Order 66 came through; at most he could hose them down a bit, perhaps deny them access to dry clothes and a radiator, and hope they died of hypothermia, later.
