Assassin's Creed 2 had perhaps one of the most beautiful soundtracks in gaming. One track I find particularly haunting is Ezio's Family:

But almost anything composed by Jesper Kyd is quite incredible.

Another great track by Kyd is from Assassin's Creed: Brotherhood, titled Escape:

It may be a play of questionable "legality" but man was that soundtrack a fantastic decision.

(Also featured in the video game version of The Godfather which was surprisingly fun).
