I think Jedi tend to learn all the forms...but they develop their own style that mixes things from all the forms.

If we're using the Legends Forms, then Kanan is clearly a Soresu stylist, with Shii-Cho leanings when it comes to offense. We know from the Grand Inqusitor that Kanan's Master was a defensive duelist. So Kanan's primary style is defensive and when you look at his lightsaber duels with the Inquisitors and Maul, you see that his opal tacks consist of straight downward strikes for the most part. That's classic Shii-Cho, with a hint of Djem So thrown in. But Kanan is not a Form V user, as he doesn't have the training or temparment for such an offensive lightsaber duelling style. I've actually been working on an essay analyzing lightsaber styles in Star Wars TV media and how they compare to the Legends Forms that we've used to know about. The Grand Inquisitor's style was very easy to analyze and correlate to the Legends Forms, for example.
