Is there any information on the military command structure of the Republic, Separatists, Empire or Rebels to be gleaned from the films--what I remember seems rather weak and illogical--here is my understanding:

    Republic:
    Clone Trooper
    Clone Commander
    General (Jedi)

    Seperatists:
    Droid
    General (Grievious)

    Empire:
    1.) Army
    Storm Trooper
    General

    2.) Navy
    Captain
    Admiral

    Rebellion
    Troopers (on Tantive IV)
    Captain
    Generaal

So are there no NCOs, or junior or field level commissioned officers? This sounds like a very top-heavy military establishment! And how does Han get to be a general so quickly? Or Lando, or for that matter Obi Wan in Clones?

Command and control structure of the Grand Army of the Republic.

Regular Army ORBAT (Order of Battle)

Squad - 9 troopers led by a sergeant.
    Platoon - 4 squads - 36 men - led by a lieutenant.
    Company - 4 platoons - 144 men - led by a captain.
    Battalion - 4 companies - 576 men - led by a major.
    Regiment - 4 battalions - 2,304 men - led by a Jedi Padawan Commander.
    Legion/Brigade - 4 regiments - 9,216 men - led by a Senior Clone Commander and a Jedi General.
Corps - 4 legions - 36,864 men - led by a Clone Marshal Commander and a Jedi General.
Sector Army - 4 corps - 147,456 men - led by a Senior Jedi General (Jedi Master).
Systems Army - 2 Sector Armies - 294,912 men - led by a High Jedi General (Council Member).
Grand Army - 10 Systems Armies + SO BDE (Special Operations) - 3,000,000 men - led by the Supreme Chancellor.

Special Forces ORBAT (Order of Battle)

    Squad - 4 men.
    Troop - 4 squads - 20 men.
    Company - 5 troops - 100 men.
Commando Group - 5 companies - 500 men - led by a Jedi General (Bardan Jusik).
Special Operations Brigade (SO BDE) - 10 battalions (Commando Groups) - 5,000 men - led by a Jedi General (Arligan Zey).

This structure remained in place well into the Galactic Civil War as the structure of the Imperial Army. Jedi Generals were replaced by non-clone Imperial Academy graduates.

The movies show a great many NCOs and low rank officers on the Imperial side.
Guys without rank bars would be NCOs. The two "scanner techs" that board the Falcon are not officers.
Commanders and various forms of Leiutenants also abound. The Snowtrooper behind Veers inthe AT-AT is a Leiutenant. The two pilots are NCOs.

The rebels are another issue entirely. They seem to be just like real life gurrilla groups, where they hand out promotions like cand because they haven't got anything else to give.

I don't see an issue with the clones. You got troops, a guy for the troops to report to, and a guy for them to report to. That's all they need. Supply and requsition isn't a combat clone role, so it would be handled by non-clone personnel.

The droids don't make sense at all. I can't see any reason for a remote controlled droid to need a commander.
