St. Lou, MO Official March Meeting

    The fridge is well stocked with all sorts of goodies. I'm looking forward to meeting those of you I have not met yet.

    We'll see ya next time Dudeman.

    I'm assuming now that we do not need a metrolink pick up.

    If anyone does, let me know, my wife will be home so I can go myself if need be.

    ugh! I must shoot my parents at some point, because now, I can go at 5 and stay as long as I want... so am I picking anyone up? kinda need to know :p

    my little problem.....well Matt bailed out on me to go to Springfield with another friend...so grrrrrr on him...and of course I don't find this out till like an hour before the meeting starts....which means....metro once again...but I will be rather late...grrrr....okies, making some calls now....still hoping to be there....though this now means that I will prolly end up crashing at my dad's place...

    Great time!! Thanks to Tim and Kim for letting us in their home.


    On a side note, I've waken up with the flu. So I'm sorry if I've passed that bug on to anyone last night.

    Man, that sucks Dajuan...hope it goes away fast.

    I wish I could have stayed longer, or rather, I wish I could have had someone to watch my kids so I could have enjoyed some fun time. Shoey you have: a)a wonderful wife b)a beautiful home c)an awesome SW collection! My older daughter (the anti-SW one) was even checking out your R2-D2 in the garage. And I must say I loved your Yoda.

    I was rather looking forward to the crab quesadillas. Do ya think I could maybe take a look at your recipe (or is it Randy's)? Mind you, it says crab there, not crap. ;)

    Had a lot of fun.Whatever that PS2 driving game we were playing was hilarious.Never laughed so hard in my life.And thanks Tim for the cool map.
    Dajaun,the flu? You looked and sounded normal when you left.We need more meeting like that one.

    Yeah we still had good times after you left Jon. We really do need more meetings like that one. It was great.

    Thanks to all for coming. I had a great time myself (although I was a tad bit ripped by the end of the night.)

    That was Grand Theft Auto - Vice City on the PS2. Very fun indeed.

    After we finish the backyard, a deck, and the basement
    (when I'll finally get a big screen and can display my collection properly) we'll have all you guys back and do it again.

    It was very nice to meet those of you I hadn't met before and nice to see you others again. :)

    What's up for the next meeting? (I know, different thread)

    Oh yeah, Fred says hello to all.

    It was actually nice to make a meeting for the first time in forever...the last one I remember making was for the Twin Towers movie....scary isn't it....lol

    Alright here is the recipe straight from Randy's email.

    **Please note that we left out the onions and cayenne pepper cause they are not agreeable to my belly, and we tripled the recipe and you saw how much that made.**

    Also I don't know if I can ever eat these, meetballs or weenies again due to my problem yesterday. So you're on your own....


    BLUE RIBBON CRAB QUESADILLAS

    Recipe By : John Pachkowski in "Chesapeake Bay Cooking with John Shields
    Serving Size : 6
    Categories : Seafood


    1 pound lump crabmeat -- picked over
    1 medium green bell pepper -- cut into strips
    1/2 medium red bell pepper -- cut into strips
    1/2 medium yellow bell pepper -- cut into strips
    1 medium onion -- sliced into rings
    1 clove garlic -- minced
    1 package 6-inch corn tortillas -- or flour tortillas
    1/8 teaspoon cumin
    1/4 teaspoon cayenne pepper
    1/3 cup mayonnaise
    1/4 cup cilantro -- chopped finely
    1 1/2 cups Cheddar cheese -- shredded ( 1/2 cup
    -- reserved)
    1 1/2 cups Monterey Jack cheese -- shredded ( 1/2 cup
    -- reserved)
    1 tablespoon olive oil -- or vegetable oil
    1/2 medium lime -- juiced
    1 small jalapeno pepper -- seeded, deveined,
    -- and finely chopped
    Cooking spray

    Preheat oven to 450øF. In a skillet heat the oil on medium heat and add the
    peppers, onion, and garlic, and cook for 5 to 10 minutes until translucent.
    Set aside.

    In a mixing bowl, combine the crabmeat, cilantro, mayonnaise, cayenne pepper,
    cumin, 1 cup each of the cheeses, jalapeno pepper, and lime juice. Fold
    ingredients gently, so as to avoid breaking crab meat.

    Place six tortillas on a large baking sheet. Equally divide pepper, onion,
    and garlic mixture on each tortilla. Equally divide crabmeat mixture on the
    tortillas. Sprinkle remaining cheese on top of crab mixture. Cover each of
    the tortillas with those in package. Lightly spray top of each tortilla with
    cooking spray.

    Bake in oven for 7 to 10 minutes. Remove from oven and quarter each tortilla.
    Garnish with lime slice and serve salsa, sour cream, and guacamole as
    accompaniments.

    Notes: This recipe, created by John Pachkowski, was the Grand Prize Winner of
    Crisfield's National Hard Crab Derby Cooking Contest in 1994.
