    I'm not familiar with the technical side of music, though I'm trying to learn. What I wonder, though when I see scores with a bazillion orchestrators, none of whom are the composer: How can you allow so many other people to have so much control over what your music is going to sound like? I know if I were a composer, and I knew how I wanted my music to sound, time permitting, I'd want to orchestrate it myself, not entrust that to someone else!

    It depends on the composer. Sometimes orchestrators have a great degree of control, sometimes they simply copy out the parts for the full orchestra. The latter is the case with Williams, who typically does eight-bar sketches that are later expanded by his orchestrators. And yes, you would want to have total control over your pieces, time permitting, but time does not often permit!
