Well Anakin has filled out a lot for the third movie. But I think it's fair to say that it is a "good" weight gain. As in he bulked up with muscle, to give him a more Darth Vader-esq appearence.

The meet that you saw pictures for is a once a year thing. Though there are quite a few conventions through the year that are similar.
