I can't believe I left out Threepio's many dismemberments. While we're at it let's not forget his head in AOTC. And, um, do his coverings count?

Adding to the dismemberments:

Obi-Wan chops of the front legs of the acklay during that battle at the Geonosian arena just before killing it.

I imagine Anakin dismembers some Geonosian body parts in the droid factory sequence. For sure at least one Geonosian is cut vertically in half, losing its entire right side ... or was it the left?

Also, I think somebody, might be Poggle the Lesser, gets sliced through their torso when Vader slaughters the Separatist leaders on Mustafar.

 

Poggle is even lesser now.

Seriously, aside from Anakin, how many times has someone lost a leg? For humans and other bipedal creatures, that is much harder to recover from than a hand, prosthetics or no prosthetics. Granted, that would cut off (pun intended) their escape unless the person who did the chopping was distracted with someone else or a friend of the amputee came and helped them out. Losing a hand sucks, sure, but at least they can still run away, right? Lose a leg and you're pretty much screwed.
