I absolutely love the profession-based EU novels. There is the X-Wing series of course, which tells of the exploits of X-Wing pilots, and more recently the Medstar books, which are about those who clean up the messes left after battles. Are there any I'm missing out on (any series' about bounty hunters, besides the "Tales of"?)? And what other books of this sort would you like to see? Some can sound dull on paper, but could be very interesting... like a series about a travelling droid dealer or, I dunno, anything really. I think these type of books really add texture to the EU as they give insight to some of the less likely, in-your-face characters.

Well, there's the Bounty Hunter Wars, but those are atrocious. Personally, a planet-hopping musician sounds pretty interesting to me.

EDIT: There's also Republic Commando, which I hear is pretty good.
