I just recently got into new canon novels. I loved the legends stuff(before new canon was a thing). So far I've read Dark Disciple and am finishing Catalyst now. Both great(Catalyst so far have about 50 pages left). Basically what I'm doing is reading and watching everything in chrono order(movies, TV, novels, and comics) with few exceptions. As far as novels I'll be reading Ahsoka next followed by Lords of the Sith, Tarkin, A New Dawn, Thrawn, Guardians of the Whills(very excited to learn more about Baze and Chirrut), Inferno Squad, Bloodline, and Phasma in that order.

I'm skipping the Aftermath series and Heir to the Jedi(the former due to lack of interest the latter due to hearing awful reviews from every single person I know who read it).

I think the reason GoTW and Smuggler's Run feel a bit more adult is because they are written by Greg Rucka who outside of Star Wars only writes regular novels and comics geared to mature readers.

Yeah, Rucka's superb but I'm getting the same sense for Liu too.

I am most looking forward to The Legends of Luke Skywalker. That's got me starting Ken Liu's The Dandelion Dynasty novels right now. They had already been on my radar because of my interest in wuxia, but his entrance to Star Wars lit has made them a priority.

    Interested in Leia, too.

I've got both volumes, but I want the third to be out. I'm hoping Lui can avoid the Fantasy Curse that delays a final volume for years. (Rothfuss being the prime perp / victim of that.)
