I would agree that piano would be a good start, mostly because you learn skills in piano that you wouldn't otherwise, like being able to do two different mechanical motions simultaniously. Plus, you do learn the theory of how chords work, and how notes interact with eachother well.

I am not sure about method books...perhaps if you PM one of the pianists here, they would know a good book. But, taking lessons would be very important as well. For adult lessons, check with any local colleges or universities. They often either have a means by which you can take with the professors there, or other connections to teachers. That would also be a great place to start.
