Would you buy a book by an author who doesn't normally write sci-fi/fantasy books? I think it'd be interesting to see an outside author's take on a Star Wars book. Tom Clancy would be good for an X-Wing book. Imagine what wild story Michael Chrichton could write.

Who else would make good Star Wars writers?

It depends. I think that Clancy would be an awful choice for SW. Not sure about Crichton, but I don't think he'd be ideal. I think that there are certainly plenty of SFF writers who are competent who have not written SW books yet, and they should be tapped before we start straining for other authors. Besides, why try to initiate people who clearly are interested in terrestrial politics and murder mysteries and stuff like that into the SW UniversE?

George R.R. Martin is a great author, he could do some cool things

If somebody were to make a humerous book, like the SW phrasebook, Terry pratchet would be cool, he wrote some funny sci fi, and is the funniest author ever.
