I plan on having her watch Star Wars with me (She's never seen them)
Should I just have her watch the OT?
Or should I try and have her watch the prequels as well?
Would she really be missing that much from not watching them?
I watched them myself, and while there were a few things that were nice to see origins to, there wasn't anything too huge and mind blowing that could be missed, was there?

I would say yes. At least that way she will have experienced the entire Star Wars saga to date. But I'd do OT first, followed by PT.

I'd say leave the choice to her. Consider not adding in your own bias.

I plan on doing it in that order if I do have her watch all of it
I'm just saying, in a hypothetical situation where she didn't watch them, what would she really be missing?

She'll decide if she wants to or not after the OT
Is there anything I should give her information on if she decides not to watch them?
Anything honestly important besides the obvious (Things about Anakin's backstory, Obi's training, ect.)

Whatever you decide but it really ought to up to her if she watches and what order. I don't like the PT overly much. I chiefly only watch for Dooku and Obi.

Yes she should watch them. It's her choice, but I would recommend watching the OT first.

OT first is a must. PT is optional.

Depends. I think it's best if you start with the PT then the OT to get the full experience but that's just my opinion. You could ask where she wants to start first though.

Yes. And watch either I II III IV V VI or I IV II V III VI. Just tried the later for the first time myself, and it made for a very interesting experience.

The whole reason the prequels were made was so people could understand what led to the OT. Yes there are a few flaws in the PT and yes they probably aren't the most edge of your seat, thrilling roller coaster ride films you'll ever see, but they do explain the reasons why what happened in the OT happened. So yes I think you should show her the PT.

I assume you like this girl, right? Then why would you ever consider showing her the prequels?

Baz Edit: Your PT bashing is grossly inappropriate. This is a warning. Next time, you are taking a vacation from the JCF.

Don't depend upon the opinions of others regarding the PT. If your girlfriend is willing to watch the movies, show them to her - and allow her to form her own opinion.

As others have eluded to, it's kind of subjective and just depends on what she likes.. But to answer the question about what would be missed by not watching the PT, here's my opinion on some important things that come to mind:

    1. Palpatine being the Emperor - his character development is a lot more interesting when you watch Ep1->6.. The way he manipulates everything.. I remember being shocked after Ep 1 when a friend told me he was the Emperor.

    2. Anakin and Obi-Wan's relationship - seeing it come together and fall apart makes their re-meeting in Ep 4 more meaningful (again imho) - also makes the Force Ghost scene in Ep 6 make more sense.

    3. Darth Vader's character - knowing the person behind the mask adds a lot more to every one of his scenes.. If she already knows from pop-culture that it's a guy in a suit, and that he's Luke's father, then she won't be very surprised by ESB anyways and she might as well have the character development to go with it first, to make those moments more heart-felt.

    4. The Empire - The stormtroopers come off a little weak in the later episodes sometimes, but seeing them built up first in the earlier ones can make their later downfall more interesting.

    5. Celebrations! - I personally love the celebrations at the end of Episode 6, and it makes it so much cooler having seen planets like Coruscant and Naboo again, after having seen them first.

I'm sure there's more, but that's what comes to my mind first.
