I've heard about how the Empire used Wookies as slaves, but don't know when this happened, or where it was discussed. Where was this shown or mentioned?

Canon or Legends? For Legends, it's all over the place -- Dark Lord, Force Unleashed, various old sourcebooks. Everywhere.

For canon, Life Debt just came out and happens to be partly set on Kashyyyk under Imperial rule.

In canon the use of enslaved Wookiees on Kessel was a major plot point of the Rebels series premiere "Spark of Rebellion" and its novelization, The Rebellion Begins (which expands on the storyline a bit as compared to the aired episode). I believe the first Rebels Visual Guide also touches on the topic.
