It's a necessary bond for chronological reasons.
As for beer - there's a saying in Russia that while other societies are separated between alcohol drinkers and non-drinkers, Russian society is separated between Vodka drinkers and those who drink weak ass stuff like beer.
Hondo probably goes for stronger stuff, so he doesn't always drink beer...
It could have multiple meanings. I thought the strongest connection between the Jedi and Hondo was what the title referred to.

WOAHAKASHYOUREAGAMEHOST. I mean, yeah, I guess it refers to the pirates in general teaming with the Jedi, proof that they're not as bad as they say they are, sorta like how Han ends up in ANH.

I foremost thought of the lightsaber circle thing being meant to show their unity as Jedi, but I definitely like the similarity to the republic logo which is apparent now that it's mentioned.
That's pretty much what a team 'fist' and 'jump' is supposed to do right? Show unity? That's what it looks like to me with the added convenience of looking like the republic logo. Really some tragic foreshadowing there.
