Hahaha, Anakin was just a bad swordsman as a young one it seems like.

Count Dooku fights in the style of "Makashi". Makashi is designed for single lightsaber on single lightsaber combat. I guess it would be Obi's last resort to see if Anakin could knock the count off his feet with two lightsabers, something he is not used to.

I'm just going to assume it's not his first time using dual lightsabers. I mean he has been through a lot of Jedi training, I'm pretty sure somewhere in there he tried out dual wielding.

If one goes by the Attack of the Clones novelization, Anakin fared better and longer than Obi-Wan did against Dooku, if not because of superior swordsmanship then because Anakin had greater raw Force power than Obi-Wan. But the novelization does make it a point to mention that Anakin added the second lightsaber to his attacks in a smooth manner, thus certainly suggesting that Anakin had received at least some training in the Jar'Kai style.

It could well be something he had practiced incorporating into his style to surprise and throw off his opponent.

There is too much detail to go into now, but the novels get into sword fighting styles more; there is plenty of possible explanation for this.
