According to Dark Lord: The Rise of Darth Vader, the reason for that is because Vader wanted to eradicate all traces of his former life as quickly as possible. I’m not much of an EU reader, but Dark Lord is really one of the best EU books there is.
Any good artists out there? How about drawing RotS Anakin with Shaw's face as a young man.

Eh... this is far from perfect but its the best I could do while at work. Had to keep hiding the window when people walked past me. lol

Do you think it was ok to change Shaw into Hayden in RotJ? If so, why wouldn't you be ok with the reverse? Just curious, no arguement meant.
The change from Shaw never made any sense. Lucas is his own worst enemy.
Because in a sense, "Anakin" was in a 23 year coma the moment he became Darth Vader. The moment he said "Noooo!" and picked up Palpatine, Anakin finally reawakened, and Vader was gone. It's a bit like being frozen in carbonite, but on a more spiritual level. Makes enough sense to me, considering the mysticism of the Force.
The Shaw replacement thing never really bothered me, and I find the photoshops really funny for all the wrong reasons.

Personally, I don't have a problem with it in theory, but I don't think the execution was done well at all.
Except the problem with that is, Shaw is Anakin at that point. Not Vader. It's a ridiculous change. And if you are showing the movies to first time viewers in the order they were made, nobody is even going to know who this creepy looking kid is.
It's Lucas doing what he does, tinkering with things best left alone. It's not that I don't understand the thinking behind it, it's that I don't agree with it.
True, Shaw looks like Anakin physically, and to the eyes of Luke and everyone else. But what does Anakin look like in the eyes of the Force? The Force hadn't seen him for 23 years!
