Im guessing the converted cargo bay area is pretty big. Any port windows or anything we can see out of?

Being a cargo hold that is being used it makes me wonder how much room the ship has for supplies and other necesities if the crew is taking up that space, as crew quarters are normally small anyway.
Well, since the ship has been modified would it also as I can't speak for Chew the creature. Would they had fitted thinking a head, don't like you see on smuggler ships. Hidding places to store stuff.
I will say we shall be approaching our first stop sometime tomorrow or friday.

Hehe... Its safe to guess we're in the middle in the nice circle...No separate rooms like shown, just one big living area.
And that the cargo is in area 14.

I would believe those are hatches to the exterior of the ship. It is kind of a tricky diagram. What do you think
Yes. I would agree those are hatches from the outside of the ship, into the cargo area directly.
Here is a ref pic of the ship...
Probably an access hatch to reach the cargo area from the bottom of the ship. Also probably access hatches, when the ship also goes underwater, and needs a way to hook up to a hatch.
Of course, our GM can change whatever he needs, but this is the key that I found...:

All in all, a pretty cool vessel.
Meh it could use a beskar hull upgrade...
