Balance was brought to the force when Anakin/Darth Vader hunted down and killed all but 2 Jedi.But they remained undetected by the Emperor and Darth Vader,which led the Sith to believe that there were nomore Jedi and the prophecy was foiled.When Yoda read the prophcey he said that The Choosen One would destroy the Sith and bring light.but he misread the prophecy and there was too much light so by turning dark he balanced out the force.

But still there remained the 2 jediand they showed a chance of hope.and it came in the form of Luke Skywalker,he was trainded and his destiny was layed before him.His destiny was to rebuild the Jedi Order and he does this by finding the light that was still in Darth Vader,so he could fullfil the second part of the prophcey,Destroying the Sith.

The balance was disrupted when Obi-wan was killed until the Luke became a Jedi.Then Yoda died and the Sith were ahead in the balance,and when anakin killed sidious he fullfilled the second part of the prophcey,he destroyed the Sith.This was how he fullfilled the prophcey.

 

Acutally from books and other articles I have read I believe more than a few survived.( Maybe around 8-12)

 

Indeed, there is a series of books dedicated to the Jedi who survived (Jude Watson's "The Last of the Jedi", I believe there are around 5 books as of now). Although his reply contained inaccuracy, I say, that since that part was not a specific requirement in his task, that it be overlooked, as he did answer the question in his task.
