    Rella - I don't have a vegan one, just a regular one. Men belong in the kitchen.

    Black beans, chili powder, cinnamon, salt, and a touch of lime juice if you like is excellent. I sounds as if it should be a monstrosity, but it is not, at all. I don't have precise measurements for the spices . . . maybe 2/3 chili pepper to 1/3 cinnamon? Salt and lime juice to taste.

    There's a couple vegetarian restaurants here in LA that do seitan dishes and I love them.

    I've been using seitan instead of beef when I make stir-fry dishes lately. I really kind of like it. I've also been "cutting" ground beef with TVP when I make tacos or sloppy joes for the kids. They haven't noticed yet. I love good vegetarian cooking, and I'm trying to cut down on my red meat intake, but I will probably always have a steak or a good burger once in a while...and I do mean once in a while, not weekly. I've also completely changed the way I snack. Instead of beef jerky or potato chips like I used to munch on, I eat hummus on whole wheat tortillas, or tabouli in a pita pocket.

    If I can kick my coffee addiction I'll be even better off, but that ain't gonna happen soon.

    Not sure if serious but in case you don't know about this guy, he's got a Youtube channel where he cooks vegan recipes (which I'm sure it should be quite easy to adjust to vegetarian). He does all of this in full black metal outfit and growls instructions at you. I watch it just for the entertainment.

    My coffee addiction isn't going anywhere either, nor is my love for wine and beer.

    Here's my chili recipe, which can be made with veggie ground beef and comes out pretty well:

    1 lb veggie "ground beef"
    2 cans red kidney beans
    28-oz can diced tomatoes
    8-oz can tomato sauce
    1 onion
    2 T chili powder (makes it kind of spicy, you can use less)
    1/2 T salt
    1/2 T garlic powder

    Crock pot for four hours or stove for half an hour. My Mom uses the same recipe and throws in bell peppers so that's an option; I don't like bell peppers so I don't use them.

    My wife found an online blog with a recipe for making rather legit corned beef hash using TVP. I will ask her where it was, because, as an Irish bloke, I was actually impressed by the results.
