Those poisonous centipedes looked like they were pooped into the room.

I think those things weren't centipedes at all. They were actually poisonous droppings from flying probe droids. Seriously though, doesn't it seem like there could have been a less gross way to deliver the deadly goodies?

There probably could have been, but I think it has to look a little gross and creepy for effect.
My movie theater shivered and went "ugh" when the creeeepy, crawwwly, skittery kouhuns were released and slithered all over the bed. People don't like things like that, and the "poop" effect may help gross us out a little more.
