JCC Veggie tips for Watto

Have you tried rårakor? It is a kind of potato pancakes made by shredding potatoes, adding spices (usually just salt and pepper) then fried it in a pan like thin pancakes.

Traditionally you serve them with jam or similar (I would recommend lingonberry jam or apple sauce) and fried pork but the pork can easily be exchanged with fried fungus, halloumi or similar.

 

I love my meat and vegetables, but draw the line at tofu. That stuff is pure vomit to me.

 

That brings me back. Seventies dish!
We used to call it rosti.

 

superwatto, i made my easy black bean burritos tonight and i decided to share the recipe with you. this will make one large burrito or two small ones so adjust accordingly if you are cooking for more people. you will need:

-1/2 can black beans (washed)
-one clove garlic (minced)
-1/2 anaheim pepper (diced) (or a whole jalapeno pepper or appropriate amount of whatever pepper you like)
-1/3 small onion (diced)
-3-4 baby bella mushrooms (sliced) (these are totally optional if you want to try making this for your kid)
-tortillas (i usually use whole wheat ones but whatever you like)
-some cheese (medium cheddar usually for me)
-some salsa
-some sour cream
-like a tablespoon or two of olive oil

that was too much cheese. i ended up just having to shove about a third of it in my face. okay after you have all your stuff you want to saute the onions, peppers, garlic and mushrooms in a frying pan on medium heat. after a couple minutes add the beans, mix around the stuff until cooked. usually i heat the tortilla on a separate pan and melt the cheese on it a bit, but that's not really necessary. then all you gotta do is make that stuff into a burrito.

Buy crescent rolls and line them in a cupcake tray. Then put a little tomato sauce, shredded mozzarella and whatever veggie the kid likes. Instant veggie pizza cupcakes.


Sub the pepperoni out for veggies.

SuperWatto I made this mushroom risotto last night. I had dried mushrooms instead of fresh and used the water in which I had soaked the mushrooms instead of chicken broth. It was absolutely glorious.
