Most of my favorite moments from the SW saga comes from TESB. I love the Dagobah and Cloud City sequences. They are 2 very powerful sets of scenes. The music also makes them that much more powerful. I also love the trench run, Vader and Luke's battle aboard the DS2. Anakin leaving his mother was a powerful scene. The last half of ROTS is also very powerful when the whole galaxy gets turned upside down and you can feel the pain that the characters are experiencing.

Two favorite moments from each movie for me:
The Phantom Menace
* The first meeting between Anakin and Padme
* Padme revealing her true identity to the Gungans and asking for their help

Attack of the Clones
* Padme comforting Anakin in the Lars' garage
* Obi-Wan's verbal jousting with Jango in the Fett quarters on Kamino

Revenge of the Sith
* Palpatine telling Anakin about the "Tragedy of Darth Plagueis the Wise"
* Padme's death and the births of Luke, Leia, and Darth Vader (one of the most emotionally powerful montage scenes in the entirety of the Saga)

A New Hope
* The escape from the Death Star
* Han and Jabba's conversation/confrontation in Docking Bay 94

The Empire Strikes Back
* Yoda dropping the deception and truly revealing himself to Luke
* Lando helping Leia, Luke, Chewie, and the droids escape from Cloud City

Return of the Jedi
* Wicket stealing a speeder bike in order to help out the Rebel strike team
* Palpatine shocking the life out of Luke

Star Destroyer one screen at start of OT movies. Binary Sunset scene, Battle of Yavin, Han on DS, Luke and Leia crossing the chasm, Carbon Freezing Chamber onwards until end for ESB, Speeder bike scene on Endor, Lapti Nek, Emperor's arrival on DS2, Vader's arrival on DS2, Palpatine Force lightning ROTJ, Obi-Wan watching Clone Army, Palpatine and posse watching Clone Army, R2 oiling and setting on fire the SBD's, R2 running into wall, shocking the SBD and getting kicked for his trouble,Yoda bashing Imperial Guards into wall, Anakin/Obi-Wan/Grievous meeting in ROTS, the Pod race, seismic charges, double sided lightsaber, Anakin and Dooku darkness red and blue scene, Battle of Hoth, the AT-AT's, Palpatine in ROTJ, First moment of ROTS, astroid field, Ewok tree village,

 

I really love the part in ESB when Luke enters the Carbon Freezing Chamber, and the orange lights slowly turn on to reveal Vader.
'The Force is with you, young Skywalker. But you are not a Jedi yet.'
That quote is one of the best in the entire Saga!

 

Chewie howling at the end of ANH and the Rebels do stuff. Turn, cheer, end the movie.
When R2 opens the door in ESB so the good guys can escape to the falcon and then fly away.

 

When Vader kills Sidious.

 

My favorite scenes from each film are:

The Phantom Menace:
The ending celebration is quite nice. The score that flows in the background is beautiful and poetic.

Attack of the Clones:
The opening attack on Amidala's cruiser. Man, that was one hell of a way to open the film.

Revenge of the Sith:
Shockingly, my favorite scene is not the opera house scene. I actually much prefer the scene where Anakin finally opens the saber on him. That's where the real turning begins. From that moment until where Anakin kills Mace, the tension reaches its highest in the film.

A New Hope:
I've always loved the scene where Leia has to witness the destruction of Alderaan. It's cruel and brutal, but it shows the full power of the Death Star and the evilness of the Empire.

The Empire Strikes Back:
"I love you." "I know."

Return of the Jedi:
"It is too late for me, son...."

Every moment From the beginning to the end of each film.

 

TPM: The reveal of the double saber was cool. It's utterly impractical as a weapon, but sometimes the rule of cool prevails.
AotC: The chrome flying wing at the beginning is one of my favorite ship designs ever. Too bad they blew it up.
RotS: Meh.
ANH: Rebel fighters launching and closing in on the Death Star. "Look at the size of that thing!" "Lock S-foils in attack position."
ESB: Han outmaneuvers three Star Destroyers. If they ever make a SuperSpecialEdition, I want to see them collide.
RotJ: Cockpit viewpoint shots of MF and fighters in the DS2. They need to release that in IMAX 3d. Also, every single thing Luke and Vader do in the throne room. That's the heart of the whole saga.
TFA: Finn's wisecracks, all of them. Ditto for Han. Double ditto for Chewie. The lightsaber flying to Rey. Leia's reveal. 3P0's reveal.
