Check out Scott Tennant's recording of Joaquin Rodrigo's Invocation and Dance for solo guitar. That's a great piece.

Talking about Rhapsody in Blue - what do you think of the cartoon they did to it in Fantasia 2000? I loved the skating bit.

I would go with Canon for the greatest piece of all time. There are so many layers to it.

I would say "the battle" from the movie Gladiator.
Anyway, all tracks from Gladiator are good...

"Montagues and Capulets" from Sergei Prokofiev's "Romeo & Juliet". It's the best.
Johann Strauss's "Blue Danube", Maurice Ravel's "Bolero" and Rossini's "William Tell Overture" (u know, from The Lone Ranger) should be considered too.

Speaking of Fantasia 2000, does anyone think that there's a part in the whale scene with Resphigi's Pines of Rome that would make a great scene in one of the next two episodes? I'm talking about where the whales come up out of the water and you see this great aerial view of them coming at you and then it pans around to behind them. I always imagined that the whales could be replaced with ships and that would look pretty neat in a Star Wars context.

Rachmaninov's 2nd Piano Concerto. That stands out for me. The second movement would make a great Ani/Padme theme.

I really like the Final Fantasy 6 soundtrack, especially the actual orchestral pieces (from the Grand Finale CD?).

If you're going to mention Rimsky-Korsakov, I think his best piece is "Procession of the Nobles." We used to play that in band about every other year and I think it's one of the best orchestral pieces ever. It can be heard on "Fiedler's Greatest Hits" featuring the Boston Pops. It's an essential album, I suggest you pick it up. Best ever? There's too many to pick from. "Summer, Highland Falls" by Billy Joel. Listen to the accompaniment, it's definitely in the classical vein. Best episode ever.

easy--bill conti for "Going the Distance" in the original Rocky. That's the only thing that can compete with John Williams.

for star wars--duel of the fates gets better every time I hear it.
