Why would the rebels even bother to attack the death star in ROTJ? The emperor is getting up there in age and looks like he could keel over any day, and Darth Vader is no spring chicken either, he may just opt for retirement after Palpatine's impending heart attack.

If somebody is beating your child, do you let them continue because their arm has to get tired eventually?

    Nope...

They didn't want Palpatine or Vader in power for a moment longer than was neccessary. The sooner their reign of terror was ended, the better.

While Palpatine, Vader and the Death Star were around any planet could have ended up the next Alderaan.

Why would the rebels even bother to attack the death star in ROTJ?

It was going to be larger and more powerful than the Death Star that we saw in ANH when completed. And once they had the chance to complete it, who knows what they would have done to the galaxy and the Alliance. That would spell certain doom for everyone right there.

Plus, just because the Emperor dies doesn't mean the Empire will automatically crumble. They would most likely elect a new Emperor(Vader)and continue their rule. Someone had to stop them...

Yeah, DS2 would do more damage than DS1. They had 2 destroy it then.

The Rebels were well aware of the power structure of the Empire and knew that if they could eliminate Palpatine, the Empire would be strung into chaos and the Republic could be born again.

Why didn't we just wait 20 years until Hitler died of natural causes?

    That'd be fine, right?

Its what they do. There is a battle going on. Rebels/Imperials. USA/USSR (wait, USA/WORLD). The Empire have become the Rebels sworn enemy. ESPECIALLY after what happened to Alderran, if they let them build another monstrosity, the next technological terror really could be the ultimate force in the galaxy. Then GL would have to do what has been done in a very few movies...let the bad guys win.

If you think that the Emperor could die any moment you're wrong, I think that the idea is that when you become a sith you cannot become a spirit after you die, but you can live for an extremely long time, possibly forever, as long as you don't get killed.
