Why didn't mace put his saber up to Dooku's neck instead of Jango's?

Dooku is the bigger threat he could of then force pushed jango or something. Maybe was it cause he still hopes Dooku will turn back.

The beginning of the novel Shatterpoint has Mace thinking about it, thinking that he could killed Dooku. But did not.

Maybe Mace knew that Jango would have just blasted him instead of flapping his jaws like Dooku.

Mace was talking to Dooku, not Jango. And while Mace was talking to Dooku, Jango just could have shot him. So Mace put his saber up to Jango and talked with Dooku.

Mace is having a pretty hard time accepting Dooku's turn to the dark side. Remember that "he was once a jedi, it's not in his character."

Mace is giving him the chance to surrender. Jango had to be held in check to give him that chance.

In truth could Mace take Dooku?

He might have seen Jango as a lesser threat.

But as we saw in the film the moment Mace was destrated Jago got his helmat on and shot his flamethrower at him.

At that point he didn't know that Dooku had fallen to the Dark Side and decided to stop any threat Jango could pose to Mace as he probably assumed that Jango was Dookus only protection.

As long as he didn't put a saber to the Viceroy's neck, everything's fine.

Jango was in his "blind spot" while he was talking to Dooku.

Mace could have thrown a grenade and blown up the entire VIP box, but that's just not the jedi way. He showed Dooku some respect and held his saber up to Jango instead. ;)

Correct. BTW, *ahem*"A more civilized age" *ahem* [face_batting]

Later its Dooku's turn "Surrender and your lives will be spared". Face it, the remaining Jedi were just about to be massacred.

Jango was the one trying to kill Padme. Plus mace didn't like how he dressed. :p

Come to think of it, why didn't he just killed them both when he got the chance, instead of blabing stuff like 'this party is over' !?

Yeah, many of those resones above, and also, he would have to walk past Jango to get to Dooku, hence Jango would see him, Jango was closest to the entrance out of anyone in the box.
