I haven't watched the dvd but here's a review of the extras from ign.com:

The LD release of Willow was featureless, so fans eagerly awaited this DVD, but the extras here still have some people wanting more.

You get an excellent full length scene-specific audio commentary by Warwick Davis. His track never really has a quiet moment throughout the film, as he has something to say about just about every scene. He is very detailed (so much as remembering the name of the pig in the beginning of the film), and reveals quite a few details about the production that haven't really been heard before. It is one of those commentary tracks that is easy to listen to and is worth watching the DVD a second time to hear, especially if you are a fan.

Then there is a making of featurette that came out back when the film was released that features interviews with just about everyone involved in the movie. This short video isn't quite as promotional as the specials that you see today, but it is up there. Next up you can watch a pretty informative retrospective feature about ILM's effects in the film and how they affected other movies that came after Willow.

Finally, there are numerous TV spots as well as the teaser and theatrical trailer.

Unfortunately, there are no deleted scenes on the disc. In the commentary track Warwick Davis describes some scenes that were shot and then dropped, but they aren't on the disc and should have been.

There is behind the scenes footage of Lucas, both on set with Ron Howard, and being interviewed.
I think that the ILM documentaries (there are two, one is an easter egg) are worth getting the disc for alone!

EDIT: I should add that one ILM documentary seems to have been made recently (after Phantom Menace at least), whilst the other - and the main making of - seem to be from Willows initial release.
