They just had a stunt man playing him. He didn't have any lines or anything, but that doesn't matter. Probably cut him since they're playing up a romance with Rogue and Iceman, which started in the first movie. Throwing Remy in there would screw that up. Maybe in the 3rd one though **crosses fingers**
