What does The Stolen Earth give away about the rest of the series?

No, not at all. I really really liked the finale for series 2. I LOOOOOVED series 3's "Utopia" , but the two parter finale was bad (the first parter wasn't awful, the 2nd parter was atrocious).
but yeah, I'm on board for classic villains returning.

Agreed.
Although I enjoyed Daleks in Manhattan two-parter & the Sontaran Stratagem two parter. They weren't done that well, but it was worth seeing great characters doing what they do.
The Age of Steel two-parter was the best old villain rivival so far IMO.

I really loved the AGE OF STEEL two parter, I agree with you. But the two you mentioned before I thought were some of the worst since the shows revival - I've always been very out spoken against Helen Raynor (who wrote both those two parters). I still don't think she should be allowed to write for doctor who. The level of quality writing just plummets when her episodes are aired

Just watched it and absolutely loved it. Probably the best episode since 'Blink'. Dr Who is so much better when it goes for something that is simple, yet incredibly unsettling. 'Blink' did that, as did the two library episodes. I was surprised to see RTD pull out something that was so typically Moffat.

Who cares? The final two-parter looks set to be a blockbuster, bringing together several strands from all the "Nu-Who" series.

Point is, it demeans the Daleks and lessens their threat if they appear each year and get soundly beaten.
Giving them a break for a series or two and have them turn up when least expected would give them more clout as the arch-enemy.
The whole effort that was put in to eliminating the Dalek's silly flaws (like inability to climb stairs) that had led them to be mocked is wasted if they constantly get beaten.

I'm not very up on Old Who, but have the Daleks actually ever killed the Doctor? Perhaps they should be the ones to end Tennants reign, it'd definitely be a way of making them more threatening again.

A rumour that has come up over many years is that a Dalek Death Ray can kill a Time Lord outright (hence how the Daleks were able to be so effective in the Time War against a race that can regenerate). The Daleks have never killed the Doctor, but they might save that for the very last series if they decide they want to have him killed off.
