Awesome.
I don't guess you've had authentic Cajun gumbo, Dani? It's like medicine. Seriously. Not the way the people in New Orleans make it. That's Creole Gumbo. Totally different.
And depending on how you make it, it's not all that unhealthy. Not compared to cracklins and fried coke, anyway.

I've never been a big gumbo fan, but I don't think I've ever eaten authentic gumbo. One of my friends from undergrad is at LSU now and I keep meaning to go visit her and eat real Louisiana food.

It's really hard to find the real stuff, but when you do I would imagine it's a life-changing experience. I've been trying to come up with a way to package the stuff and ship it out to JCCers so they can know what it's really like, but so far I haven't found a way
Funny thing though, Baton Rouge is actually just outside of Acadiana, which is where you're most likely going to find authentic Cajun gumbo.
I should make an instructional video on how to cook gumbo, and other cajun delicacies. I think that would be a pretty sweet youtube thing.

One thing to remember: If it has tomatoes in it, it's probably not Cajun gumbo. The Creole variety, as well as what we call "Okra gumbo" will often contain tomatoes, but Cajun gumbo generally doesn't.

You'll have to go to the Quarter, of course, and get the obligatory cafe au lait and beignets at Cafe du Monde.
Then, you'll have to hit Bourbon St. and have a Hurricane at Pat O'Brien's... There are other great bars, like the Tropical Isle (the home of the hand grenade) and other venues... A nice upscale casual bar is the Whiskey Blue at the W hotel. Another more upscale bar is The Bombay Club, but it's a dressy casual place. Then, you can hit Harrah's Casino if you'd like, anytime.
There are TONS of great restaurants, but the one I most recommend is Restaurant August. That's in the fine dining arena, though. Other fine dining places that are of note in the Quarter area are GW Fin's (an awesome seafood restaurant), Bayona, Galatoire's (the quintessential New Orleans restaurant), and Herbsaint. A nice upscale French bistro on Magazine St. (more uptown area) is called Lillete.
Cheaper, but great venues, are La Crepe Nanou (a funky French Bistro off of St. Charles Ave.) and this other funky cool and very good place is Jacques-Imo's. Jacques-Imo's tends to get packed and is very popular, so call to make a reservation (La Crepe Nanou doesn't take reservations...). I'd also highly recommend Acme Oyster House in the Quarter for some awesome fried seafood and raw oysters (although the raw oysters are best in the colder months of the year, so the locals prefer). There's also this very cool sushi place called Rock-n-Sake in the Wherehouse district right next to the Quarter, and you must get the Hawaii 5-0 roll if you go there!
There's also this awesome burger joint called Port O' Call on Esplanade Ave right on the periphery of French Quarter.
If you have a late night and want to hit this cool diner, go to Camelia Grill.
My favorite place for gelato is Angelo Brocato's, on N. Carrollton Avenue right off Canal St. They're a local favorite.
I also definitely recommend riding down the streetcar down St. Charles Avenue from River Road to downtown.... The architecture is phenomenal.
Also, there's the National World War II museum that's a really great visit, but I've never been, believe it or not! The Audubon Zoo and Aquarium of the Americans (with an IMAX theater) are awesome, and the Audubon Insectarium is pretty neat, too.
There are also the very strange and very old (and somewhat creepy) above ground cemetaries on the periphery of the French Quarter (I'd take a tour of these in a group). There are tons of galleries and shops and little museums and other things in the Quarter... You've got to try an Aunt Sally's Praline if you get the chance, too!
I'd also recommend being somewhat careful about not venturing outside of the immediate French Quarter area at night if you're hanging out there.
