I'll do my "if they were made now" later. This is my "if they were made then"

    The Star Wars Trilogy

    Episode I: A New Hope (1977)

Instead of being a princess, Leia is stated to be a Senator's daughter, with her last name explicitly stated.
The Imperial March is played when appropriate.
Luke arrives back home just as Owen and Beru are executed, uses blaster to kill stormtroopers (fuels hate for Empire).
Greedo scene is unneeded, keep the Jabba scene instead.
Leia reacts stronger to Alderaan's destruction, Bail is shown on Alderaan just as Death Star fires at it.
Leia is shown to be grieving when Luke rescues her.
    Leia doesn't say "walking carpet".
Luke briefly duels Vader on Death Star after Obi Wan's death, they speak to one another.
Vader begins to suspect the truth and communicates the emperor, who tells him to forget about it.
Obi Wan's ghost appears and haunts Vader in trench.
Tarkin speaks to the emperor just before the Death Star explodes.
Luke isn't so excited while blowing up stormtroopers throughout the film.
    Chewbacca gets a medal too.

Episode II: The Empire Strikes Back (1980)

Imperial fleet is first seen with Vader meditating.
Han and Leia's interactions are different, feelings seem more mutual.
Leia doesn't flirt with Luke, Luke is jealous of Han and Leia.
Face of older Anakin (or Obi Wan) is shown when Luke cuts open fake-Vader, Luke has flashback.
We see Luke's vision of Han and Leia in danger.
    Vader kills Admiral Piett.
Leia, Lando and Chewbacca actually fight Boba Fett.

Episode III: Return of the Jedi (1983)

Vader visits the Emperor's throne room on Had Abaddon, he is ordered to kill Luke at all costs.
Leia is not in a bikini.
Luke has vision of Yoda's passing, Obi Wan and Yoda's spirits appears to him while in space, similar conversation.
Vader is the other hope Yoda meant, Luke must not let his jealousy of Han and Leia consume him.
Jedi Masters tell Luke he must redeem his father.
Crix Madine's dialogue is replaced by Mon Mothma's, more personal interaction between Mothma and Leia.
Rebels must destroy shield generator on Endor, a moon of Had Abaddon.
Rebel fleet, led by Lando and Ackbar, prepares to invade Had Abaddon.
Chewbacca reunites with his family on Endor, Wookiee army helps rebels (Han, Leia, 3PO, R2) destroy shield generator.
Chewbacca or Lando dies in space/land battle.
Obi Wan's spirit tells Luke to go to Had Abaddon, is actually a trick vision by the Emperor.
Leia tells Luke that she loves Han right before he leaves, but pleads with him not to go.
Vader captures Luke on Had Abaddon, encourages him to help him overthrow the Emperor.
Han and Leia are captured by a hidden battalion, they are taken to Had Abaddon.
Luke's anger at Leia and Han persuades him to join Vader.
Luke and Vader confront the Emperor together, he duels them with his own lightsaber.
Vader disarms the Emperor, the Emperor uses lightning to defeat them both.
The Emperor urges Luke to kill Vader, promising greater power.
Luke duels Vader again, who taunts him about Leia.
Luke defeats Vader, but Vader threatens Han and Leia, who are brought in as prisoners.
Obi Wan appears to Vader and reminds him of the man he once was.
Yoda's spirit haunts the Emperor, reminds him of his own fall from the Jedi Order.
The Emperor lashes out on everyone, Vader distracts him and urges Luke, Han and Leia to escape.
Vader renounces his loyalty to the Empire, and duels the Emperor with regained strength.
Luke, Han and Leia reconcile, Luke apologizes.
Both Vader and the Emperor are killed in explosion as Rebel troops storm the palace.
Obi Wan's spirit assures Luke that Vader died redeemed.
    Celebration on moon, everyone reunites.
Luke sees spirits of Obi Wan and Yoda, as well as the redeemed Anakin Skywalker and his aunt and uncle.
Luke speaks to Owen and Beru, and Owen apologizes.
Anakin wishes that he could be forgiven, but Luke and Obi Wan assure him that they forgive him, even if nobody else does.
Luke rejoins the celebration, as his deceased loved ones watch.
Han and Leia kiss as Luke watches with a little sadness, but then smiles.

    Jabba to Han
"Because I'm all about that debt, bout that debt, no late pays"

How about Tom Hiddleston as Han and Taylor Swift as Leia? Harry Styles could be Luke. Just some alternatives.

Mostly just alter RotJ, the other two are just fine. To be fair, RotJ is mostly fine the way it is too, it's just that the plot elements are not spread out throughout the movie and thus it kinda feels like it should have been two movies. So either spread out the plot more, or just make one major aspect of it an anthology movie. Maybe have it so that Luke promises that if Jabba lets Han go, Jabba can have a chance to really hurt the Empire, and Jabba spares some of his pirates to help out, which would intertwine the two major stories going on a little better, and have Jabba a bit more present throughout the plot without him wasting any time at all. That, or make his sequence an anthology movie that explains how Han came back and might focus heavily on Luke testing out his Jedi skills, and Leia and Lando infiltrating the palace. Funny how all of my fave human characters have names beginning with "L".

Oh, and the Dark Side doesn't make any sense in that one. Give somebody bad vibes from seeing his friends lose, and then goad him into killing you, and he turns evil? That makes no sense at all. The Dark Side is seductive, not sado-masochism. If the reverse was the case, Christian Grey's squeeze would be a Sith Lord by now.

Oh, and kill off Han or Lando in that one. Give a more emotional and nuanced ending than what we got.

That being said, I'd prefer to see this as more of a "what if?" fanfiction than anything else.

I feel the same, but considering franchises released a decade ago are already being rebooted, I'm not entirely optimistic about it not happening.

I don't think that kids that young would get a rank. In any case, Anakin had the rank of commander as a 20-21 year old padawan, so it's not quite that bad.

There almost certainly won't be. I wouldn't be surprised if they reboot the prequels.

Back on topic, most of my corrections would involve ROTJ.

    ANH:
    • Have Vader as a more imposing force in the opening scene
    • Fix the Obi-Wan, Vader battle (They should both be significantly better at using light sabers)
    • Further emphasize the fact that the Battle of Yavin is a surprise attack. The battle feels a little odd because the Rebels SHOULD be largely outmanned
    ESB:
    • More from the dark side cave
    ROTJ
    • Make Boba Fett do anything
    • Dump Ewoks for something at least somewhat more imposing
    • No Death Star 2 (imperial palace is a good idea)
    • More universal celebration at the end

Leia (Kiera Knightly) is not a princess, she is a general.
Luke(Michael Cera) sees the space battle from above.
Owen and Beru (Joel Edgerton and Bonnie Piesse) aren't so casual about Luke being like Anakin, they mention his slaughtering of the Tusken Raiders.
Sidious (Ian Mcdiarmid) addresses the senate on Coruscant, telling the senators to go home. He is accompanied by Mas Amedda and Sly Moore. Tarkin (Benedict Cumberbatch-replacing Wayne Pygram) watches his speech via hologram and discusses it with Vader (James Earl Jones, Hayden Christensen)
Obi Wan (Ewan McGregor) speaks to Qui Gon's (Liam Neeson) ghost before rescuing Luke.
Obi Wan explains midichlorians and the history of the Sith and Darth Sidious' rise to power.
The Greedo scene is cut in favor of the Jabba scene.

    Leia cries as Alderaan explodes.
Leia is more serious during the escape from the Death Star but doesn't say "walking carpet".

To those who felt that ROTJ was a bit too "kid-friendly" after the events of TESB, I recommend checking out Darth Kalik's story, "Vader's Valkyrie". It's a damn good story of a much darker take on ROTJ with Vader who remains conniving and ruthless as he was in Empire, along with several major changes in the second and final acts that made my jaw drop in disbelief. Here's the link to it.

I would not have empowered the Ewoks as much as they were in ROTJ. Wood spears, logs and rocks defeating the Empire. It was a stretch then; now it’s unbearable to watch. I’d make the Ewoks into Wookie.

I wouldn't have Anakin become a Force Ghost. It doesn't make sense at all, asks more questions than it answers, and dilutes the point of Force Ghosts. Also, Shaw vs. Christensen would never have been an issue.

Another reason that Anakin shouldn't have become a ghost is that Vader's reaction to Obi-Wan's disappearance
shows that Vader didn't know about Forcd Ghosts.
