Mine:

The Phantom Menace:
- Lightsaber Duel: Qui-Gon and Obi-Wan (vs) Darth Maul

Attack of the Clones:
- Jedi/Droid Arena Battle

A New Hope:
- Battle of Yavin

The Empire Strikes Back:
- Lightsaber Duel: Luke (vs) Darth Vader

Return of the Jedi:
- Space Battle

Overall:
- Jedi/Droid Arena Battle

Boy, I was surely bored today

 

TPM: Naboo Palace Sequence
Panaka and Padmé cappin' some droids.

AotC: Clone War (do you mean the Battle of Geonosis?)
I especially love the Hailfire Droids

ANH: Battle of Yavin
Great sequence that also feels like a WWII dogfight.

ESB: Escape from Cloud City
Leia, Chewie and Lando cappin' some stormies. Great music too, as well as humor from Artoo and Threepio.

RotJ: Sail Barge Assault
Luke kickin' ass, Leia runnin' around in a skimpy bikini and comic relief from Han, Chewie and Lando.

The Sail Barge Assualt is my favorite in the saga. Lots of action, some funny moments and excellent music.

 

TPM: Obi/Quigon vs. Maul(nothing else compares: great visuals, extremely fast-paced fighting, great musical theme, and, making it unique from the other duels, basically no dialogue).

AOTC: Clone War/Battle of Geonosis(incredibly epic, chaotic battle, and I must agree with Fel. The Hailfire droids are awesome).

Episode III: THE DUEL(of course it's not out yet, but I think I can safely say what I'm gonna love the most).

ANH: Battle of Yaving(pretty cool space battle[especially for it's time]).

ESB: Vader vs. Luke(Ok, I LOVE lightsaber duels, and this one is great. Love all the dark environments Luke and Vader go through).

ROTJ: Luke vs. Vader rematch(the final, ultimate climax to the saga. LOTS of great emotion and we get to see Luke womp on his Dad.) There are so many other great action scenes, though: sail barge battle, speeder-chase, and the final space battle.

Overall: Obi/Quigon vs. Maul. It was such an awesome duel. Hopefully THE DUEL in Episode III will womp on this one, though.

 

My favorite is the finals duels above Endor in ROTJ. Powerful stuff.
