What is the difference between how the FO tracks the Resistance and how say Vader tracks the Tantive IV or Anakin tracks Asaji Ventress (in CW) through hyperspace?

From reading the novel, it's about the same as tracking the Falcon in ESB. "Calculate every possible destination from their last known trajectory."

huge database of hyperspace lanes, destinations etc that they put into a computer surrounded by a hyperspace field generator that speeds up the process a billion fold. Somehow it gets the right answer.

Rogue One established that you could change course in hyperspace ("setting course for Eadu"), so I guess if Rose had told Holdo how it worked the Rebels could have plotted a course with a couple of unlikely course changes that the First Order algorithms would not anticipate.

They once asked Gene Roddenberry how the inertial dampeners worked. He replied, "They work just fine."

Vader used a homing beacon, which was mentioned in ANH.

In TLJ they use a different technology - a tracker room.

That's the main difference I believe.
