JCC The JCC Grilled Cheese Taste Test

    Huffington Post has just published its most important article of the last decade:

    I'd very much like to get your opinion on this.

    Please take the time to try as many of these variations as you like and report back as soon as possible:

    1. Medium Cheddar
    2. Fontina
    3. Monterey or Sonoma Jack
    4. Gouda
    5. Comte
    6. Boschetto al Tartufo
    7. Gruyere and Emmental (feel free to do this one as Gruyere OR Emmental) The spätzle experience suggests that Gruyere on its own is a bit too intense, and the Gruyere/Emmental combo is proven and time tested, but still.
    8. Toma
    9. Havarti
    10. Raclette

    Also, I welcome your notes about bread and cooking technique. This page offers tips

    I'm tempted to try out the ones where they suggest other ingredients. That may actually be kinda interesting.

    tillamook medium cheddar is already all i use and it's heidi's number one so i'm not feeling very incentivized to try the rest of their lists. smoked gouda sounds somewhat interesting, but what can i say i'm a purist.

    I'm doing variations 1, 2, 7 and 9 tonight and will post the family's reviews. My general sense of all things is that @tom is always right, but I have a good feeling about Fontina. We'll find out whether the rest of my family (with the exception of monkey boy) agrees.

    How can you include Monterey Jack, which is barely a cheese (it's some sort of dairy and plastic combination), but not note the joy of toasting Port Salut with some sage and rosemary so it goes gooey as ****?

    There is no truth in this list.

    A grilled cheese consists of a kraft single and white bread. Anything more is bourgeois and highfalutin and anyone caught making such a thing will be put against the wall.

    Wouldn't the resultant combination of chemicals and heat produce a toxic cloud that's noxious to all who encounter it?

    If you're going to include Kraft American, then I would suggest you also include the gel you get in wristpads for your mouse; the silicone you use in construction or home repairs, and old tumours. Since they're not cheese either.

    Do you define pretentious gits as anyone who likes cheese that is made with some sort of care as to the final product; in which case, that's a good thing right?

    ok, so on the left plate we have gruyere/ementaller and fontina. On the right we have medium cheddar.

    All three of us agreed: medium cheddar is the undisputed winner of this round. Fontina doesn't have enough flavor for the job. You end up with a butter-flavored grilled sandwich. The solution might be something like what Ender Sai suggested: rosemary and sage. something like that.

    Gruyere/Ementaller has a base flavor but still lacks something. I'd almost want to go all in on the Käsespätzle analogy and add a layer of grilled onions to the sandwich.

    But medium cheddar is more or less perfect for the task.
