One I noticed today was The Emperor's Death in the original ROTS trailer. It seems to both parallel the redemption of Anakin and fall of the Empire of by showing the opposite of both and also foreshadow his later return from the dark side.

Starts right when Palpatine says, "Every single Jedi is now an enemy of the Republic."

What other themes have you noticed that are played after their debut and what do they symbolize/represent?

Do you mean within the films or outside the films? Because, obviously, all the themes are used recurringly (after their debut) within the films.
Also, The Emperor's Death is not a "theme", but rather a cue featuring a theme.
Most SW trailers use cues from earlier films. I don't think they represent anything other than "it sounds appropriate".

perhaps the most obvious one is the Rebel fanfare, used to symbolize "fighting back" against evil.
