Thought Experiment: An EU-friendly Sequel Trilogy

I want to propose a thought experiment.

Let's suppose for a moment that, instead of erasing all the old EU, Disney decided to delete only the books set after the Young Jedi Knights series, deciding to rewrite everything that come after it and to set the Sequel Trilogy after the YJK series.

Given this premise, how do you think an alternative post-YJK Sequel Trilogy could have been developed without the Yuuzhan Vong, Darth Caedus, Abeloth, the Lost Tribe of the Sith, etc? What ideas could they have used?

Hmmm....

Characters fighting mafia like bosses who are taking advantage of a galaxy re-structing itself post Emperor Palpatine?
Luke looking for lost Jedi and having to deal with some Jedi who don't want the Order to come back.
Citizens and political leaders who weren't aware of Emperor Palpatine's Dark Side background becoming aware after finding records that were suppose to be destroyed and suddenly being killed off for it, so characters have to figure out what is the connection behind all these murders. Could have a scene where someone gathers leaders onto a planet, only for that planet to be infected with a plague that wipes them all out, which will hinder the rebuilding efforts even more forcing Luke or other new characters to step in. Maybe even the plague could end up infecting some of Luke's new students as a warning to stay out of the mysterious killer's business.

Still need to have Han's two children. An opportunity to refine Jacen? Of course! Most realistically, diving into the children of legacy characters would be something Disney might have considered if we are following this hypothetical. (I'm just happy Chewie isn't dead since the Yuuzhan Vong would have been removed, though I still enjoyed their tenure as baddies of the galaxy.)
