OT - Personal conflict. Father and Son dynamic.
PT - Galactic conflict. Good and Evil Dynamic (watch my post above on this page).
ST - i guess bad executed undercooked personal and galactic conflict? Can't figure it out actually. There is no well outlined personal conflict between characters and there is no well shown mythos-like ancient grand scale eternal fight between the Good and Evil too.

PT= Falling. You see it everywhere with Obi Wan and Maul taking falls in TPM. In AOTC Obi Wan falls on Coruscant where Anakin jumps(on purpose as he does when he makes his choice).
OT= Consumation. Swallowed up by the DS, Vader trying to comsume his children, being consumed by the Darkside, space slug, Wampa, Ewoks, everything is trying to eat everything.
ST = Not sure. I'm leaning towards "revelation" what with Rey learning her parents are junkers, Luke not being the mega super epic hero, Luke realizing he can do something in one final act, Yoda and the ancient Jedi documents.

Prequel Trilogy: The dark side of attachment, the dangers of possessiveness and a lack of acceptance. Also the perils of personal and collective hubris as seen with Anakin, the Jedi, and the Republic. Anakin's fall as a tragic hero mirrors the fall of the Jedi Order and Republic as a whole.

Original Trilogy: The importance of hope in resisting evil and the redemptive power of love. Love is shown to be redemptive when it is self-sacrificing rather than selfish.

Sequel Trilogy: The idea of bringing balance to the Force and of finding that equilibrium between light and dark? Hard to say since the last movie isn't out yet, but that's what TLJ made me think it was.

I would say that all of the Star Wars saga films have the same three themes: Hope, Legacy, and Family. But Individually:

Prequel Trilogy: Power- The fear of it (the Jedi's treatment of Anakin. The misuse of it (Anakin, the Jedi, the Senate). The insanity and corruption that comes with it (Anakin and Palpatine). Neglecting to use when you have it (the Jedi).
Other themes: The Savior Complex, Heroism, Love Is Not Always Enough

Original Trilogy: Redemption- Over the course of the three films, three characters have their moralities challenged and change in some way after making mistakes. First, Han. Then Lando. Then Darth Vader. Luke also redeems himself from his failures.
Other themes: Nature vs Machine, Good vs Evil, Coming of Age

Sequel Trilogy: Rebirth and Evolution. The core characters (Rey, Finn, and Kylo) begin their arc with masks on, change consistently, and by the end of both of the films they are completely unmasked and different people. Kylo is obsessed with evolving beyond what he hates, Finn is forced to evolve past his role as a stormtrooper and his flawed morality, and Rey is called to be more and carry the torch of previous Jedi. Luke also gets this treatment. He unmasks himself at the end of TFA and by the end of TLJ evolves beyond life itself. Also, TFA and TLJ are both very reflective movies, with TFA paying homage to a lot the classic Star War-isms and TLJ deconstructing and challenging them. Episode IX and its characters has the opportunity to take the lessons learned from the first two films and capitalize on them, finally reaching some form of actualization and completion.
Other themes- Failure, The Power of One, Individual vs The Collective, Privilege
