Honestly I wouldn't mind a full milisci-fi show set either in the year between Endor and Jakku, or the year where the FO took over the galaxy.

There also a lot of comic stories I wouldn't mind being adapted for a show, from legends stuff like Agent of the Empire to more recent endeavors like Dr Aphra.

I would also love a show set in the Unknown Regions, if only to provide images of the various cultures and their tech that exists out there.

1. In the immediate wake of Mace being defeated by Palpatine and thrown from the window, a small, failing, independent news team decides to investigate reports of the alleged Jedi coup, obtain amateur images of Palpatine holding a lightsaber, and go looking for the rumored Jedi body that was found in the streets.

All of this as Palpatine is securing his rise and moving to censor, discredit and silence independent news sources, especially those with damaging evidence that are a threat and could cause scandal to the new Empire.

2. A droid in servitude to a single, childless, dying master is freed from his inhibitors as a last gift from his owner before death. The story follows the droid as it explores its freedom, learns who it can trust, and how it lives in a world where it is simply seen as an appliance.

3. A crime drama about the rise of a new mob boss in the wake of Jabba the Hutt’s death.
