Isn't like the first Death Star had any shields either.

Or at least any capable of the "shooting at it is useless, its commando time" style you see at Hoth or Endor. (Makes me wonder if those kinds of shields require an atmosphere to operate).

It would have to be like the shields on the Death Star, where they underestimated the potential of starfighters and they could slip through. But the whole idea was that the Death Star II and presumably capital ships of the era had learned to tighten up their shield range to smash fighters as well. This is illustrated in the cut storyboard for the initial attack run that gets aborted, two fighters smash into the shield. The novelization also states the capital ships have to knock out the Star Destroyer's shields in order for the fighters to have a chance against them.

Maybe it's the other way round - the fighters slip through the shields, knock them out - and thus the capital ships have a chance of taking the Star Destroyers down (fighter weapons not being able to punch deeply into even an unshielded hull).

No, the book did it pretty much the other way around.

But, ever since the first film, fighters slipping through shields is canon. We also know shields can vary in density and being reconfigurable, since the same film showed the ability to "tighten deflector screens", "switching power to front deflector screens" and "angle deflector screens".

I don't have access to a scanner at the moment, but in the Original Trilogy Storyboards book, there is a panel that shows an unused concept for a Rebel starship (transport?) escaping Hoth under ion cannon cover fire. Blocky, larger than a medium transport, and looking kinda like a warship.

Does a blue squadron appear in any behind-the-scenes material for ROTJ (such as the storyboards or the making of book) or is it a creation of James Kahn?

I don't, not really. Nice designs, well done art, but they just don't seem to fit with the used/utilitarian feel of Star Wars designs.

Does that mean Yavin Yellow Squadron and Yavin Green Squadron are also canon?

I think at this point they're going to break down and send a final message: "You know what? IT'S ALL CANON EVEN FANFIC ARRRRGHHHH"

That would depend on how "align with what is seen on screen" is interpreted.

They later clarified that quote that said only where they align with the movies. In other words, I am not 100% sure if we can assume that Dreadnaughts, VicStars, or Corellian Battleships are canon, as they don't appear in the movies or are directly mentioned.

What's interesting is, the Geonosian Dreadnaught is the closest candidate, since a) the Separatist council was told to evacuate to Mustafar in ROTS and b) they had to travel there somehow. The novel says their transport was a dreadnaught of this kind.
All the rebel ships would line up with the unnamed models used to pad out the fleet shots of ROTJ.

The Rendili Dreadnaught and the Carracks were blocking the path of the Invisible Hand and caused that one Venator to damage the ship, which we see in ROTS.

The sink hole where the Utapau city was, was large enough to fit a Victory through. Which is also true when we take a Victory model and measure against the core ship off to the side of the sink hole. :p

Things that don't align are blatant contradictions like "Owen Lars being Obi-Wan's brother", dialogue and event changes.

Well, what really matters is if they are ever used again, and since the new EU can draw on the old one...

What size category would the Firefly-class transporter from the Firefly TV-series count as in SW?

The Firefly, going by Wikipedia - would be about 80m long - comparable to SW medium transports.
