I imagine it depends on who's available.

Jimmy Smits is almost 70, though Benjamin Bratt is less than a decade younger. Although that means he's about the same age Jimmy was when he filmed Rogue One. I could see them going either way, if this Leia series does end up happening.

I recently treated myself to a Disney+ subscription, my 1st 3 'picks' have been the Black Hole, Loki season 1, & Kenobi. Loki had a strong finish after a slow start, but Kenobi...
There was lots to like, but too many bits that almost amounted to being retcons for me.
i get it that you can't have Kenobi only fighting Tusken raiders or hanging out in Mos Eisley, for 6 episodes though.
The retcon of meeting Leia when she was old enough to remember him, could Ben have done some kind of jedi mind trick to make her forget? Otherwise that famous message 'years ago you served my father' would have been 'my father and me'
Beru & Owen Lars fighting Reva was ridiciulous, IMHO, & unnecessary. Owen had already shown heroism by not letting on that Ben was hiding
At the end, why did the writers have Ben meet Luke, instead of turning up but not speaking with him? this seemed to contradict ANH, when Luke has no knowledge of a Ben Kenobi
The worst writing choice for me was the Vader/Kenobi battles & the new power (levels) they showed, like Vader being able to raise up Ben before he burns him, Ben's massive rise in Force power. I thought Ben defeating & badly wounding Vader was not a good fit for ANH ( i would have preferred if they didn't meet at all). in the final confrontation i thought a better ending would have been for Ben to fake his death, when Vader buried him under the boulders

I'd guess Leia is using plausible deniability by pretending that the Organas haven't been working with a wanted man during the reign of the Empire, should the message be intercepted. Sure, she's asking for his help now, but if questioned about it, she could just claim that she didn't know he was a Jedi.
As Obi-Wan says in the show: "No one must know, or it could endanger us both".
"Well, I don't know anyone named Obi-Wan, but old Ben lives out beyond the Dune Sea. He's kind of a strange old hermit."
-Luke in ANH. He clearly knows Ben.

I don’t think episode 4 suggests Luke doesn’t know Ben Kenobi. Infact Luke is the one that brings his name up after watching the recording. That gives off the impression Luke does know him. Maybe they haven’t had a lot of interactions but Luke clearly knows of him.

And there is nothing in episode 4 that suggests they were meeting for the first time.

There are plenty of stories where they interacted. They usually end with Owen yelling at them both. What the show did differently was have Owen be somewhat chill with it for once.

Obi Wan Kenobi is basically Dennis the Menace to Owen's Mr. Wilson

What I find odd is that the Obi-Wan series focused on everything but the two things we know he did between III and IV, namely having some interaction with Luke and training to preserve his consciousness with Qui-Gon’s spirit. They saved them for a tease at the end like they were using the hope we’d see it to string us along through their filler story.

"Filler" is a word that has lost all meaning at this point.

Right? Like, filler would be stretching Obi-Wan's time on Tatooine into a full show. We already know what he's doing on Tatooine. Having him leave for a bit is one of the best ways to tell a story that actually fits a six-episode series.
