Can jelly beans go stale?

I'm eating some jelly beans from quite some time ago (err, 3 year or so)... these are safe to eat, aren't they? They seem ok, but I figure I should make sure before I consume too many of them...

 

Um, I donno...I don't think they can.

 

Though jelly beans can go stale (I've eaten them)...they should be safe...I wouldn't worry about it...

Sugar goes stale, but it just gets hard. There isn't any chemical reaction. It's just the pressure of the outer atmosphere compressing the sugar. Just like a stale cookie. It's still a cookie. Your Jelly Bellies might taste tough, but its still just sugar.

Actually, if my calculations are correct, the enhanced nitrate in the stale Jelly Beans should be attacking your immune system any second now, resulting in your slow and painful death.
