What's that thing Chewie wears around his shoulder? My classmate suggested it could be a backpack, but I always thought it was just ammo.

Yep, ammo for his bowcaster. Never actually seen even a reference to him having to use the ammo, though...

Hmmm, a directed energy weapon that uses rounds of ammo?

That's as ridiculous as, oh I don't know, an assault aircraft studded with laser weapons being unable to take out a target because they're "out of rockets".

 

Bowcasters don't fire lasers, per se. They fire explosive quarrels, which is why Chewie carries around extra ammunition. And even normal blasters have ammo too. Characters have to replace the power packs regularly in their blasters.

 

It's his bandoleer carrying blaster quarrels for his Wookiee bowcaster.

I believe to be more specific it is called a bandolier and it does hold the ammo but I am pretty sure it is bandolier if you want to call it something cooler than ammo-holder.

 

Yes, I've seen it referred to as a bandoleer on numerous occasions.
